I'm Back


I'm back to blogging about things I do and see — like this ice cream cake I am building.  I make ice cream with only egg yolk, sugar, milk, cream, corn syrup and the flavouring I make from organic fruit that I purée and bake to remove the water.

The top layer is raspberry, the middle is orange and the bottom is blueberry. It will be condensed, compressed and carved; the outer circumference of the top will lined with small balls of ice cream of the same flavours plus passionfruit (orange), lemon (yellow) and pistachio (green).

I will serve this with créme chantilly and bits of thin broken waffle,  a few fresh berries and a mint leaf. It's for a dinner I'm hosting here next week.
