I Have Spectacular Neighbours

 

This is the rolled meringue cake I made for my dinner tonight with Jay, Eoin and FrançoisI make a large flat sheet of meringue on a cookie sheet, and when it’s cooled after cooking, I lather a mixture of cream cheese, heavy cream, sugar and diced fresh mint all over it. Then I pipe lines of lemon curd across it before I roll the whole thing up. Lemon curd rosettes on top and sprinkled with more diced mint.

Tuesday dawned bright, clear and gorgeous! I diddled around in the morning and then I took Her Highness for our morning walk. It’s such a beautiful time of year. I think this is the quietest time of year, all the tourists are gone, and there’s moisture in the air that smells sweet with forest fragrances. I love the mornings. 

I had a spa in the silence before we walked, and after we walked, I cleaned up all the remaining detritus and toted it to the backyard behind the fence. Just doing two barrow loads was enough for me. I came in to rest before Pete arrived back to put gutter guards on over the eaves of the cattery. What a guy he is! He does so much for me. I’ll have to do a lot of baking to thank him for all the work he’s done on my roofs.

My body was still tired and sore from the heavy workday on Monday, so I was very happy to get the clean-up done early and to note that there was no need to do any watering yesterday. That filled me with joy. The ground is still damp from the Sunday rain, but I’ll need to water today.

The infusion pharmacy called. I must stay home all day on the 24th to receive my Tezspire so that I can put it in the fridge right away. I had to cancel Sheba’s grooming appointment for that day. I realize now that I should make no plans for the third week of every month. I need to keep my days free until I know for certain what day the drug will come.

I went shopping and then came home to look at a light fixture attached to my roof. A light there has been on for two weeks. It’s a motion sensitive fixture, and it’s not working, so I wanted to see what was going on and remove the bulb if necessary. Mission accomplished; time to bake.

Baking seems like an odd thing to do on such a beautiful day (it was 28°), but I had to bake the cake for tonight. I’m glad I discovered the meringue roll cake that people love to eat and that is not an onerous bake. Plus, each time I make it, I make subtle changes to improve its flavour and its look.

Once the sheet of meringue was out of the oven, Sheba and I headed into the village for cream cheese because I bought strawberry cream cheese my mistake and I want plain. Then we went for a walk on the the trail by the medical centre that has only very gentle hills. Then we came home to chill, have dinner (and a bone for Her Highness) and watch a movie. My day was productive and done! Hello chaise!

Just as I sat down to eat, Dave arrived from next door to give me two air filters for my car. Nancy had been in Nanaimo yesterday, and she had to go to Napa Auto, so she picked up the filters I need for my car, and today, after our group walk, I’m going over to Nancy’s and she’s going to change the filters. Like Pete, she’s someone who enjoys helping others. They both are miracles to me. What a neighbourhood!

Yikes: We have a great store here on Gabe called Island Home and Garden. It’s huge, it has “everything,” and I go there often. Since our pet food store closed, they’ve been carrying pet food. I love this store, but it is closing. It’s a real drag. I’m sure most everyone on the island is sorry to see the store go, particularly farmers who valued their carrying of animal food.

It's yet another sunny day. We’ve had three days of rain in the past four months, and we’re a part of the world famous for endless days of rain. Yes, they are coming, but our climate patterns are changing. Normally, we have plenty of rain between Summer and ‘Indian’ Summer, but not this year. The weather forecast, however, is calling for rain on the weekend.

We’ll walk with our pack this morning, then I go to Nancy’s, and after the filters are changed, I’ll come home to water all the beds. Tonight: dinner with my friends at Jays.
