Progress with Festival des Glaces



This is my pistachio cream cooling in an ice bath. Soon I will start churning it and then I will pour it into a mould into which I will submerge the other pre-shaped layers. The pistachio is incredibly delicious. I had never made ice cream before, except in class, so this has been a revelation. I will never buy ice cream again. Next: The chocolate shell and I have decided it has to be crushed pistachios (not roasted hazelnuts) on the outside. It's my first 100% original culinary creation. Yum!

The pistachio layer is not nearly as think as it appears in the diagram. It's actually quite thin on top and thicker on the sides.
