Success

Yesterday was dull and showery, but the smell of dampness in the air was lovely. I took Herself for a grooming and spent the rest of the day prepping the dinner party.
I was relaxed all day. I’ve made great advances in that regard. I even had time for a leisurely spa before cooking the tart. As I did last time I entertained, I made my beet pasta and broccoli to go with it. But the salad is a first: I’ve made a fennel and radish salad laced with super thin rings of shallot that’s been brined in salt, lemon zest and lemon juice.
Well, I made a Pavlova of colour. It was light brown like a barely toasted marshmallow. But I went with it. It was a bowl, and it was thickly lined with whipped cream supporting a dump of semi-stewed fruit plus fresh raspberries. It was a monster hit. It tasted great—really great! I’ll definitely be making it again.
This tart was a hit too! But the hit of the evening were the appetizers—four different kinds and every one absolutely a total knock out. François and Eoin are remarkable cooks.
I’m beat after expending all the energy involved with entertaining. I’m really enjoying today with naught to do but relax (and dishes); I’m just chilling and having spas.
